Cinnamon buns are dangerous.

I LOVE cinnamon buns.
 I could eat them until I get sick.
 
 
Mother-in-law used to make them by the dozens for me. Then I had to go on a Gluten-free diet for health reasons. My two children also follow a Gluten-free, Dairy-free diet. Oh how I tried to make them from many recipes. Some were too complicated to bother with, or took too long. I kept going.

Though I cannot remember why, while attempting to make tea buns from the following Duinkerken mix, I added sugar to the dry mix.
 
 
I was out of shortening so I used the Earth Balance Buttery stick instead.
 

The quick cinnamon bun dough was born.

The mix calls for milk, I simply swap for soy milk.

 
I apologize for the lack of photos, I was just so darn impatient since my tea was already poured when I started to bake them.

Add the eggs the box calls for and follow the instructions given for the tea buns (trading shortening for buttery stick and adding roughly 1/3 cup sugar). I also set oven to preheat according to box instructions. I melt 3tbs, give or take, dairy free butter for 30 seconds in the microwave.

Once the dough is mixed I spread a length of parchment paper. The gluten-free dough is sticky so smoosh a tiny bit of melted butter across the parchment paper and keep a cup of warm water nearby to keep a spoon wet.

Drop dough onto greased parchment paper and use the wet spoon to spread into a rectangle about an inch thick. Pour rest of melted butter on top and spread to edges.

In a bowl mix 1/3 cup each of sugar and brown sugar, with a heaping tablespoon of cinnamon. Spoon over melted butter and dough.
Use as much as you are in the mood for.
 I dump it all on ;)

Use the parchment paper to help roll up dough. Wet a sharp knife to cut in 1" wide slices, wetting knife between cuts. Transfer to baking sheet lined with more parchment paper.

15-17 minutes are all these babies require to bake, after a few tries the whole process will be about 20 minutes. Are you freaking kidding, I know right! No rising, no blah, blah, blah. Just quick enough to make while tea is reaching the right temperature for dunking.

  1. Oh the pressure.....I'll get my ATC's done this weekend...promise....if painting Miss K's room goes well (gotta get her back in her own room and out of mine before hubs comes home next week, teehee).
